Getting restaurant-quality qofte at home comes down to a few practical tips. Do not over-mix the meat, use your hands and mix just until the ingredients are combined. Over-working the meat develops too much protein structure and results in dense, tough meatballs rather than the light, tender texture you want. When shaping the patties, wet your hands with cold water to prevent sticking. Albanian qofte are traditionally shaped as flat, elongated ovals rather than round balls. This shape maximizes the surface area that contacts the grill, creating more of that charred, smoky crust that makes grilled qofte irresistible. Your grill should be very hot before the qofte go on. High heat creates the charred crust the card asks for and develops flavor. Resist the urge to press down on the patties with a spatula, this squeezes out the juices and defeats the purpose of adding bread to the mixture. Flip once, and only once: 4 to 5 minutes on the first side, then 4 to 5 on the second. Shopping, Make-Ahead and Storage Notes for US Kitchens
- Metric to US: 500 g of ground lamb is about 1.1 lb, and 250 g of ground beef is a little over half a pound.
- Swaps the card allows: dried mint at half the amount if you cannot find fresh, with the parsley kept in. All beef works if lamb is unavailable, though the card says it loses the flavor lamb brings. A cast-iron pan on high heat stands in for the grill with no change to the timing.
- Make-ahead: the card’s 24 hours for shaped raw qofte is inside the 1 to 2 days FoodSafety.gov gives raw ground meat in the refrigerator.
- Use a food thermometer. The card’s cue is “cooked through”, and the official number for that is 160°F (71°C).
- Cookouts: above 90°F (32°C), the USDA shortens the 2 hour limit for food left out to 1 hour.
